Fast and simple inexperienced greens with rice noodles recipe

This fast savoury meal is ideal for busy weeknights when it’s good to feed a hungry household pronto.

Substances

  • 200 g rice noodles
  • 2 tbsp coconut oil
  • 1 onion, halved and thinly sliced
  • 2 cm recent root ginger, julienned
  • 1 tbsp laksa paste
  • 400 ml canned coconut milk
  • 800 ml vegetable inventory
  • 150 g tenderstem broccoli
  • 200 g tremendous asparagus
  • 2 medium courgettes, halved lengthways and sliced
  • 1 lime, juiced
  • recent herbs, to serve (coriander, Thai basil or mint are all good selections)
  • salt

Methodology

Step 1.
Put the noodles in a heatproof bowl and pour over 1-litre boiling water. Go away to soak for 10 minutes.

Step 2.
In the meantime, warmth the coconut oil in a big wok and fry the onion and ginger for 3 minutes. Stir within the laksa paste and fry for two minutes.

Step 3.
Stir within the coconut milk and inventory and produce to the boil, then add the broccoli and asparagus and simmer for two minutes. Add the courgettes and simmer for one more 2 minutes or till the greens are tender.

Step 4.
When the noodles have softened, drain them properly and divide between 4 bowls.

Step 5.
Season the soup to style with salt and lime juice, then ladle it into the bowls and serve instantly, garnished with herbs.
