Gentle, fluffy and free from refined sugar and gluten, this low carb loaf is ideal alongside a cup of tea or freshly brewed espresso.

- 300g finely desiccated coconut
- 6 free vary eggs
- 2 giant very ripe bananas, mashed
- 1 tsp gluten free baking powder
- 1/4 cup maple syrup or maple flavoured monk fruit syrup
- 1 tsp contemporary vanilla bean
- 2 cups contemporary or frozen raspberries, plus just a few additional to garnish the highest.
Methodology
Step 1.
Preheat your oven to 180 levels and line a 450 gram loaf or bread tin with baking paper.
Step 2.
Both by hand or utilizing a hand-held mixer, beat the eggs, maple syrup and vanilla bean for a couple of minutes till nicely mixed. Now add within the mashed banana and stir to mix.
Step 3.
Fold the desiccated coconut into the moist combination, then gently fold via the raspberries.
Step 4.
Pour the batter into the lined loaf tin and prime the batter with additional raspberries and an additional sliced banana if you want.
Step 5.
Bake at 180C for 35 to 45 minutes or till golden brown and cooked via.
Step 6.
Take away from the oven, permit to chill and luxuriate in as is or along with your favorite toppings.
