A easy method to jazz up candy potatoes – and switch them from humble facet dish to the speaking level of your meal.

- 4 giant candy potatoes
- 150 ml olive oil
- 2 cloves garlic, finely chopped
- 15 g (1/2 cup) oregano, finely chopped, divided
- Flaked sea salt
- Freshly floor black pepper
Technique
Step 1.
Preheat the oven to 180°C (160° fan).
Step 2.
Thinly slice the potatoes lengthwise on a mandoline; pat slices dry with kitchen paper.
Step 3.
Warmth the olive oil in a saucepan set over medium warmth. Add the garlic and prepare dinner for 1 minute, swirling just a few occasions.
Step 4.
Take away from the warmth and stir in about half the oregano.
Step 5.
Working by the slice, brush the candy potato with the oil, stacking them on their sides in an oblong baking dish; pour any remaining oil excessive and season with salt and pepper.
Step 6.
Bake till golden brown and crisp, about 1 hour.
Step 7.
When prepared, take away from the oven and let stand for five minutes.
Step 8.
Stir collectively 1 tbs flaked sea salt with the remaining oregano; sprinkle all around the potatoes earlier than serving.
